Banana Oatmeal Cookies

Here's a recipe for our favorite, healthy cookies! Don't worry, they taste really good, and you can even eat them for breakfast when you're running late for class!


Inspired by KatieBird Bakes' Banana Oatmeal Breakfast Cookies.



Ingredients

*Makes 20 cookies

  • 2 overripe bananas, mashed

  • 1/4 cup of coconut oil

  • 1/4 cup of honey

  • 1 teaspoon of cinnamon

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon of salt

  • 2 cups of old-fashioned, rolled oats (1 cup pulsed to flour-like consistency, and 1 cup normal)

  • Semi-sweet chocolate chips (as many as you want!)


Recipe

  1. Preheat oven to 350 F.

  2. In a bowl, mash the bananas and add all the wet ingredients.

  3. Add in cinnamon, baking soda, and salt.

  4. Add in normal and pulsed oats (oat flour).

  5. Stir to combine and add chocolate chips.

  6. Place and flatten dough on a cookie sheet (about 2 tablespoons for one cookie). The cookies won't flatten on their own in the oven, so it needs to be done manually.

  7. Bake for 10-15 minutes or until the cookies a golden in color.

  8. Let cool and serve (it is crucial for the cookies to cool so they won't break apart when removing them from the cookie sheet).
