French Toast Bake

Ingredients

French Toast

  • 1 loaf of brioche bread

  • 4 large eggs

  • 1 cup of milk

  • 1/2 teaspoon of ground cinnamon

  • 1/4 cup of packed light brown sugar

  • 1/2 cup of fresh blueberries

  • 1/2 cup of fresh, sliced strawberries

Crumble Topping

  • 2 1/2 tablespoons of packed light brown sugar

  • 2 1/2 tablespoons of all purpose flour

  • 1/2 teaspoon of ground cinnamon

  • 3 tablespoons of unsalted butter, cold and cubed


Recipe

  1. Preheat oven to 350 F.

  2. Slice the bread into cubes, about 1 inch in size.

  3. In a medium bowl, whisk together eggs, milk, cinnamon, and brown sugar. Add bread to the mixture and combine. Cover bowl and let the bread soak for at least an hour.

  4. In a small bowl, whisk the brown sugar, flour, and cinnamon together. Add the cubed butter and lightly mix.

  5. In a large pan, transfer half of the soaked bread. Sprinkle half of the blueberries and strawberries on top.

  6. Then, add the rest of the bread, followed by the remaining berries and crumble topping.

  7. Transfer the large pan to the oven and bake for 30-35 minutes.

  8. Serve with more fresh fruit and enjoy!
