Bored of eating pasta with pre-made sauce from a jar? Give this pasta recipe a try and you won't miss that grocery store alfredo!

Ingredients

Cream Sauce

  • 1/4 of a white onion, thinly diced

  • 3 cloves of garlic, minced

  • 1/2 cup of white wine

  • 1 cup of heavy cream

  • 2 oz. of cream cheese

  • 1/2 cup of pasta water

  • 1 cup of baby spinach

  • 1/4 cup of parmesan cheese (any kind is fine)

  • Zest of half a lemon

  • Juice of half a lemon

  • Salt and pepper to taste

Salmon

  • 1 lb. of skinless, boneless salmon

  • 1 tablespoon of butter

  • 1 1/2 teaspoon of seafood seasoning

  • 1 1/2 teaspoon of Italian seasoning

  • Salt and pepper to taste

Other

  • 1/2 lb. of spaghetti

Recipe

  1. Cook the pasta in a large pot of salted boiling water according to the package instructions.

  2. While the pasta is cooking, cut the salmon into bite-sized pieces. Season with seafood seasoning, Italian seasoning, salt, and pepper.

  3. In a large pan, sear the salmon on all sides with butter until cooked through. Transfer salmon to a separate plate.

  4. To the same preheated pan, add onions and garlic, and sauté over low heat for 3-4 minutes. Then add white wine.

  5. Let it reduce for 6-8 minutes and add the heavy cream.

  6. Keep stirring the sauce until it thickens (about 2-3 minutes) and then add the cream cheese & parmesan.

  7. To keep the sauce from being too thick & heavy, slowly add in some pasta water!

  8. Add the salt, pepper, lemon zest and spinach to the sauce. Combine well.

  9. Add drained pasta to the sauce and mix.

  10. Add lemon juice. Taste and adjust the salt and pepper if needed.

  11. Serve pasta and top with seared salmon. Enjoy!
