Mediterranean Wrap

Make this quick and easy wrap when you're craving a flavorful meal!



Ingredients

Chicken Marinade

  • 4 boneless, skinless chicken thighs

  • 1/2 cup of plain Greek yogurt

  • 4 cloves of garlic

  • 1/2 tablespoon of Greek seasoning (we use Cavender's all purpose Greek seasoning)

  • 1/2 tablespoon of dried oregano

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 2 tablespoons of extra virgin olive oil

  • Salt, pepper, and chili flakes to taste

Tzatziki Sauce

  • 1 cup of plain Greek yogurt

  • 1 Persian cucumber, chopped

  • 1 tablespoon of dried mint

  • 3 cloves of garlic, minced

  • Juice of half a lemon

  • 2 tablespoons of Kewpie mayo

  • Salt to taste

  • Sugar to taste

Pickled Onions

  • Half a sliced red onion

  • Juice from a whole lemon

  • Salt to taste

Other Ingredients

  • Lavash bread

  • Chopped baby spinach

  • Feta (we like the herbed feta crumbs from Trader Joe's)


Recipe

  1. In a blender, combine ingredients for chicken marinade (everything except for the actual chicken) and blend until smooth. Adjust the seasonings as needed.

  2. Cut slits into the chicken thighs and marinade the chicken in a bowl for 1-2 hours (or as long as you can wait).

  3. Combine all the ingredients for the tzatziki sauce in a separate bowl. Adjust the seasonings as needed. Set aside in the fridge.

  4. Combine the ingredients for the pickled onions in a smaller bowl and mix well. Set aside in the fridge.

  5. Heat some olive oil on a pan over medium to high heat. Add the chicken thighs to the hot pan and cook them for 5-7 minutes on one side without moving them.

  6. Flip the chicken thighs and cook for another 5-7 minutes.

  7. After the chicken is cooked, slice into bit sized pieces.

  8. To assemble the wrap, spread a layer of tzatziki sauce on the lavash bread. Add a handful of chicken, spinach, feta, and onions on top.

  9. Fold the wrap and enjoy!
