Meatball Subs

Try out our favorite meatball subs - they will not disappoint!

Ingredients
Meatballs
* Makes 14 meatballs - enough for 4 subs
16 oz. ground meat of choice
1 egg
3 medium-sized garlic cloves, minced
1/4 cup grated Parmesan cheese
1/4 cup of bread crumbs
1/2 a bread slice, soaked in milk
2 tsp Italian seasoning
1 tsp chili flakes
Salt and pepper to taste
Pesto
1 cup of fresh basil leaves
1 cup of fresh spinach leaves
1/3 cup of toasted walnuts
1/3 cup of grated Parmesan
3 garlic cloves
1/3 cup of extra virgin olive oil
1 tbsp lemon juice
1 tsp red pepper flakes
Water for emulsion
Salt and pepper to taste
Other
Marinara Sauce
Shredded or sliced mozzarella cheese
Baguette or hoagie roll
Meatball Recipe
Combine all the ingredients for the meatballs in a bowl (don't mix the meat too much because the texture can come out tough).
Take about 2 tablespoons of the meat mixture and roll into balls.
Sear each side of the meatballs in a saucepan with olive oil (the meatballs don't need to be cooked through, just give them some color).
Finish cooking the meatballs in a saucepan with 2 cups of marinara sauce for 7-10 minutes. Cover the saucepan with a lid so the sauce doesn't splatter!
Pesto Recipe
Add basil, spinach, and walnuts to a food processor and pulse several times.
Add garlic, cheese, pepper flakes, salt, black pepper, and lemon juice and pulse several more times. Scrape down the sides to make sure everything is getting combined.
Slowly pour in the olive oil while the food processor is running. Occasionally scrape down the sides.
If the pesto is too thick or not smooth enough, slowly add some water until you get the desired texture & consistency.
Taste for salt and adjust if needed.
Assembly
Slice the baguette or hoagie roll in half (but not all the way - just enough so it opens)
Toast it in a toaster oven with mozzarella cheese on one side. Toast until the sides are golden brown and the cheese is melted.
Spread some pesto on the other side.
Add 3 to 4 meatballs on the cheese side of the bread with generous amounts of marinara sauce.
Fold the sub over and enjoy!
