Chicken Kathi Rolls

Happy 1 year anniversary to us! To celebrate this special milestone, we'd like to share an Our Seasoned Plate favorite: Kathi Rolls!



Ingredients

Chicken Marinade

  • 2 boneless skinless chicken thighs (substitute with paneer if you're vegetarian)

  • 1 tablespoon Chicken 65 Shaan masala packet

  • 1/4 cup of plain yogurt

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon coriander

  • 1 teaspoon turmeric

  • 1 1/2 teaspoon garam masala

  • Juice of 1 lemon

  • Salt and pepper to taste

Pickled Onions

  • 1 red onion, thinly sliced

  • 1/4 cup of lemon juice

  • 1 teaspoon chili powder

  • Salt

Cilantro Yogurt Sauce

  • 1 bunch cilantro

  • 1/4 cup yogurt

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • 2 garlic cloves

  • Lemon juice

Additional Items

  • Malabar paratha from Trader Joe's

  • Wooden skewers


Recipe

  1. Cut chicken thighs into bite size pieces, place in a medium sized bowl, add marinade ingredients and stir well.

  2. Refrigerate for 30 minutes to 1 hour.

  3. Poke marinaded chicken pieces into wooden skewers and grill until cooked (remember to soak your skewers in water beforehand to prevent burning!).

  4. For pickled onions, thinly cut red onions and season with lemon juice, salt, and chili powder in a separate bowl.

  5. Combine cilantro yogurt sauce ingredients and mix well in a separate bowl.

  6. Cook Malabar paratha according to the directions on the package.

  7. Assemble Kathi roll and top with cilantro.
