Pasta Salad

Need a quick and easy school night snack after getting rejected from your major? Here's our 3 or 5 step (depends on how far you get before crying) pasta salad to brighten your mood!


Ingredients

  • BelGioioso Fresh Mozzarella Pearl Cheese or fresh mozzarella cut into cubes

  • 16 oz. rotini pasta

  • 1 1/2 bell peppers (the more colors, the better!)

  • Zesty Italian dressing (Market Pantry/Target brand or Kraft)

  • Dried basil

  • Dried oregano

  • Salt and pepper to taste


Directions

  1. Boil pasta until al dente.

  2. Cut mozzarella (if not pearls) and bell peppers into cubes.

  3. Add mozzarella and bell peppers to cooled down pasta (otherwise the cheese will melt).

  4. Add 3/4 of the Italian dressing.

  5. Refrigerate the salad and serve chilled.

This salad can last for a week in the refrigerator. The remaining 1/4 of the Italian dressing can be added to the salad over time after being refrigerated (the pasta soaks up the dressing over time).
