Blueberry Lemon Loaf

We love a warm loaf of blueberry lemon cake in the winter time! Skip the Lemon Loaf Cake from Starbucks and give this a try!



Ingredients

Cake

  • 1 cup of all-purpose flour

  • 3/4 cup of white cane sugar

  • 1/3 cup of unsalted butter (or salted butter, and skip the additional salt)

  • 1 teaspoon of baking powder

  • 1/2 teaspoon of salt

  • 1/2 cup of milk

  • 1 teaspoon vanilla

  • 1 egg, separated

  • 1 cup of fresh or frozen blueberries

  • Zest of half a lemon


Recipe

  1. Preheat oven to 350 F

  2. Mix together flour, sugar, and butter.

  3. Add salt, baking powder, vanilla, milk, egg yolk , and lemon zest.

  4. Mix well.

  5. In a separate, small bowl beat egg white until firm peaks form.

  6. Gently fold the egg white into the batter.

  7. Pour half the batter into a greased loaf pan.

  8. Sprinkle half the blueberries on top of the batter.

  9. Fill the pan with the remaining batter and sprinkle the rest of the blueberries on top.

  10. Bake in the oven for 35-40 minutes (or more if needed).
