Friendsgiving Pumpkin Pie

Happy friendsgiving! Here's your yearly reminder to share some food with your besties!


Inspired by Claire Saffitz's Caramelized Honey Pumpkin Pie.



Ingredients

  • Flaky pie crust

  • 15 oz can pumpkin puree (unsweetened)

  • 4 eggs, room temperature

  • 1/4 cup light brown sugar

  • 1/3 cup honey

  • 1 3/4 cup heavy cream, room temperature

  • 2 teaspoons ground cinnamon

  • 1 teaspoon vanilla essence

  • 1/2 teaspoon nutmeg

  • Pinch of salt

  • Whipped cream for serving


Recipe

  1. Preheat oven to 325 F

  2. Poke some holes with a fork in the pie crust and bake the crust with pie weights or dry beans for 15 minutes

  3. Brown butter in a saucepan for 7-10 minutes

  4. Remove saucepan from heat and add honey. Mix, return to heat, and bring to a boil. Continue to cook until the mixture has darkened in color.

  5. Remove saucepan from heat and slowly mix in heavy cream. Stir constantly until properly mixed.

  6. In a separate bowl, whisk eggs and brown sugar until the mixture appears lighter in color.

  7. Whisk in the pumpkin puree, cinnamon, vanilla, salt, nutmeg.

  8. Slowly add in the honey/butter mixture.

  9. Pour the filling into the parbaked crust (all the way to the top!).

  10. Put the pie in the oven and bake until the filling is set. This should take around 45 to 60 minutes.

  11. Once done, take out the pie, and let it cool.

  12. Serve with whipped cream.
